THE BUTCHER is a premium yet casual burger bar with international charisma. Created by serial entrepreneur Yossi Eliyahoo of internationally acclaimed hospitality group THE ENTOURAGE GROUP, the established brand has operated several locations in Amsterdam, Berlin, Ibiza and Dubai. The ‘butchers’ in the kitchen exclusively work with the best quality Aberdeen Angus beef, which is much leaner than the one used by other “better burger” brands. From the best meat to the selection of herbs, the fresh vegetables, the special signature sauce, right down to the homemade semi-brioche bun; THE BUTCHER constantly commits to creating burgers that are far superior to other existing “better burger” brands using higher quality ingredients and unique recipes.

The Business Model
THE BUTCHER operates a foodcourt / foodhall format requiring a space of 300 to 500 sq ft as well as a classic street front restaurant format between 1,000 and 2,000 sq ft. Both formats are proven to generate substantial delivery revenue alongside the main eat-in trade, with total revenue consistently ranging from £1.46m to £1.63m per restaurant.
THE BUTCHER is a limited-service format: customers typically place an order at the till or from their table with their phone and then receive the food via a table number system. In lower labour regions The Butcher can also operate with full table service.
